Valve cover gaskets can leak for a variety of reasons but it is mostly due to the expansion and contraction of the metal in your engine due to it heating up and cooling down while you’re driving.  These heat cycles can cause your valve covers to shift on the cylinder head exposing leaks and causing problems.  These heat cycles combined with old engine oil can also start to change the properties of your valve cover gasket and cause it to shrink or become brittle.  These changes will diminish the gasket’s ability to seal and can allow leaks to form.
